Brühe (von mittelhochdeutsch brüeje, „heiße Flüssigkeit“) (in der Schweiz Bouillon genannt) ist Wasser, das durch darin gegarte Lebensmittel mit Aromen, Mineralstoffen und Fett angereichert ist. Brühe dient als Grundlage für Suppen, Saucen und als Kochflüssigkeit für Fleisch, Geflügel, Fisch und Gemüse. In Brühe gegarte Lebensmittel bleiben aromatischer, da die Brühe bereits Geschmacks- und Mineralstoffe enthält, die zum Teil ins Gargut übergehen, anstatt ihm diese Stoffe zu entziehen. Im österreichischen Sprachgebrauch wird das Wort Brühe pejorativ (als schlechte Suppe, deren Zutaten nicht erkennbar sind) verwendet.
